In this captivating account of the multibillion-dollar kosher food industry, Sue Fishkoff examines who eats kosher food, who produces it and who certifies it. She explains why 85 percent of the 11.2 million Americans who regularly buy kosher food are not observant Jews; interviews food manufacturers, rabbis and slaughterers; meets with eco-kosher adherents; sips boutique kosher wine; and marches with unemployed workers at the nation's largest kosher meat-packing plant. She also talks to Reform, Conservative and Orthodox Jews about the spiritual benefits of kashrut as well as its ethical and environmental values. Fishkoff wrote The Rebbe's Army and reports for the Jewish Telegraphic Agency and The Jerusalem Post.
